Why were 2x6s used to replace a supporting wall with a beam due to varying ceiling heights in the space?

So we took out a wall that was supporting and put in a beam that spans about 15 feet. We had to use 2x6s because the ceilings were at different heights.

To me, it looks pretty good but you might be able to skip the 2x6s on the ceiling in the taller room for more headroom. Alternatively, you could cut them down, attach to the existing ones, and use less material.
