What’s the best way to deal with this unsightly crown molding situation?

I think it would be a good idea to add crown molding to the cabinets. I’m not sure if there’s a wall at the top of the second opening.
That’s a good way to finish it off. Unless you want it to wrap around the corner, go down the stairs, and into the room on the lower floor then come back up and into the kitchen and connecting it above the cabinets.
Possibly it might be best to stop here

Stopping there was a good call. Unless you circle the whole house, there will always be a point where it has to stop like that.
Put it around the corner
If you’re not a fan, you could try cutting the crown molding in a straight line, framing the corner by extending it up to the ceiling to connect with the crown molding. If that makes sense…

Why is this a problem? When you turn the corner, it seems like you are entering a stairwell. Typically, crown molding is not used in a stairwell. Another choice would be to round the corner, but I prefer this method. I suppose it’s just personal preference.
Bring down the other two doorways using some 1by material, then extend the crown around to connect to the opposite side. It’s definitely more effort than it’s worth, but the installation appears solid. I personally wouldn’t make any changes to it in my own home.
