Should we consider laying new LVP flooring directly over our 80s tiles in the kitchen with cabinets built on top, given the risk of cracking during demolition?

The kitchen has these 80s tiles that the cabinets were built on top of. We’ve always wanted to remove them, but we’re a bit worried because they’re ceramic and could easily crack. Demoing near the cabinets might be tricky. It’s not the biggest deal though, I’m sure we can cover any imperfections with trim. But, here’s my question:

What do you all think about laying new flooring (like LVP) directly over the tiles? They’re hexagon shaped with grooves in between, so they’re not completely flat. Any suggestions?
