How should we approach refacing the back wall of our kitchen – rip off veneer and fill gaps or use textured wallpaper?

I hope I’m making sense here, but I’m looking for thoughts and advice. So, the back wall of our kitchen and living room is in question (it’s the right side of the photo). We’re redoing the beams and column with wood, but we’re stumped on what to do with the rest of the wall. It’s covered in old, thin wood veneer. The inside of each window needed extra framing to match the outside, and the bottom few feet under the windows are bare. What do you think is the easiest way to handle this? Should we just rip off the veneer and fill in all the gaps, or could we get away with patching some spots and using a textured wallpaper?
So when you mention “thin,” are we talking super thin? And you mentioned a few feet below the windows, but it seems like it’s more like a foot. Once the baseboard and window casings are in place, there won’t be much to see – basically just a strip bigger than the 4 3/4″ outlet plates. Just want to make sure I fully understand what’s going on.
