How long do you have to get the pine tongue and groove walls and ceiling up in your off-grid cabin before the moisture content becomes too high?

Hey team, quick question. I’m working on my off-grid cabin and getting to the interior. I’m using pine tongue and groove for the walls and ceiling. The moisture content in the wood was 5.2 a couple of weeks ago, and I’ve heard that under 5.0 is ideal. So my question is, once you unstrap it, how long do you have to get it all up on the wall and ceiling?
