How can I replace a large section of plaster wall with drywall without causing cracks when removing a chimney?

Has anyone ever swapped out a big chunk of plaster wall for drywall? I have to take out a chimney and I don’t want to get too carried away. I’m worried the plaster might crack once everything settles back in place.
Oh yeah, I’ve been there. The end result really hinges on the condition of the plaster. Sometimes it’s just simpler to start from scratch.
I’ve tackled a few projects that ended up requiring a complete redo in Sheetrock. What a disaster! I’ve learned my lesson and now avoid those types of jobs since I work solo.
