How can I properly finish the edge of my DIY tiled shower wall to cover the gap between the sheet rock and waterproof board without shimming it up?

We decided to tackle a DIY bathroom project because hiring someone was out of our budget. The tiles on the shower wall were falling off and we had water damage, so it had to be done. We had to build out the wall to fit the tub lip and waterproofing board, but now there’s a difference in height when we put up the sheet rock. My fiancĂ© was thinking of shimmying it up, but I’m not a fan of that idea because it would be noticeable near the window sill. I’d rather have it flush and then find a tile piece or edging to finish it off. Any recommendations, ideas, or suggestions for this dilemma?

In a similar situation, we used a trim piece to cover the exposed edge. Our Sheetrock protruded more than the tile, so I had to trim down one side of the piece to make it sit flush against the wall.
