How can I level out the front of my 1975 interior door frames to accommodate new doors that aren’t as tall?

Hey, I need some help with my interior door frames from 1975. My new doors aren’t as tall, so I’m planning on framing in or glassing in the top. But I’m not sure how to level out the front with this old triple-beveled edge. Any suggestions?

Take out the old door and jambs. Build the rough opening to the necessary size. Install drywall as needed. Hang new prehung door units. Add trim. Apply caulk. Paint.
