How can I construct counters and shelves using available wood planks, a wood shop, and power tools while avoiding fancy hardware?

Do you want to add brackets under each shelf, or maybe build some frames with corner posts for support? How do you envision them looking? Are they mainly for extra storage?
The shelves are supported at the corners by 2×2 posts. iven the limited space in my kitchen, I’m aiming for a design that maximizes openness.
Ot it. I suggest constructing a frame using 2×2 or 2×4 lumber, then reinforcing each corner with vertical 2×2 pieces screwed together. Finish off by adding plywood on top. How much weight do you anticipate the shelves will hold?

Sure thing! I would recommend securing the back horizontal piece into the wall and ideally into studs. If studs aren’t an option, consider using a heavy-duty anchor.
It’s a bit tough to read what you wrote on there, so I’m not completely sure what your plans are.
It’s a ton of work and they never look as good. I had to make mine because I have a very odd corner.
