Can I cover my terra cotta ceramic tiles in my kitchen without removing them, and do I need to level the grout lines for a smooth finish?

I’m looking to change the not-so-nice terra cotta ceramic tiles in my kitchen, but can’t afford to remove them at the moment. Can I cover them with something else instead? Do I have to fill in the grout lines to make them even with the tiles? Will I notice the grout lines if I don’t? Any advice would be greatly appreciated, thanks!
It really depends on the type of flooring and how thick the new flooring is going to be.
I’m not quite sure about that. Would it be okay to install a floating vinyl tile?
Want to install a floating LVP over the tile? Grab some mapeii plani-patch and a trowel from Lowe’s. Mix it up, spread it across the floor, and fill in those grout joints. If you skip this step, you’ll end up seeing and feeling them under the new flooring.
