Any suggestions for dealing with lack of exhaust fan over stove with open kitchen?

We decided to remove the wall between our kitchen and living room (luckily it’s not holding anything up), and we’re getting rid of our popcorn ceilings. Our stove is right in the middle of the new opening. We’ve never had an exhaust fan that vents outside. Has anyone else dealt with this? We’re concerned about the ceiling getting damaged from grease, heat, and moisture from cooking. Ideally, we’d like to avoid installing a hood over the stove if we can. Thanks in advance for any advice!
